No Salt Ketchup

A great spiced ketchup that freezes well.

Equipment

  • Medium pot with lid, cheese cloth, kitchen string, scissors, mixing spoon, measuring spoon, can opener, measuring cups,

Ingredients

  • 1 1/2 inch Cinnamon Stick
  • 1 tsp Whole cloves
  • 1/2 tsp Dill seed
  • 3 Cans no salt added tomato sauce (14 oz/398 mL)
  • 1/2 c White wine vinegar
  • 1/2 c Honey
  • 2 tsp Onion powder
  • 1/8 tsp Cayenne pepper

Instructions

  • Place cinnamon stick, whole cloves and dill seed on a 4 inch square of cheese cloth. Make a slip knot in the end of the string. l draw up all four corners of the cheese cloth. Slip the know over the ends and pull tight. l tie in a double know and snip end of string close to know.
  • Pour tomato sauce into medium sized pot. Add remaining ingredients, including spice bundle. Bring to a boil over medium-high heat. Reduce heat to low and simmer, stirring frequently until it mounds on a spoon. Cool.

Notes

Serving Suggestion
It’s ketchup.  You can eat it with anything.  It is good in baked beans and makes a great base for no salt added BBQ sauce
Storage
Store in a jar with a tight-fitting lid in the refrigerator.  As there is no salt and no other preservatives, I have kept it no longer than 2 weeks in the refrigerator.
Freezing
This freeze well.   Freeze in a freezer safe container, labeled with contents and date, up to 3 months. 
Plan Ahead
Make the spice bag ahead.  Measure the remaining ingredients into a pot and refrigerate overnight.   Add the spice bag to the pot before cooking.
Sodium Content
No salt has been added to this recipe.  The only sodium is that which occurs naturally in the food.
